MANUFACTURING

Each chocolate tells a story, about our encounter with a planter. So, our chocolates are the fruit of a close, sustainable partnership that focuses on exchanging, sharing and mutual respect. We have chosen to showcase the work of seven exceptional Planters (based in Guatemala, Brazil, Madagascar, Mexico, the Dominican Republic, Colombia and São-Tomé), boasting incredible know-how, and with whom we work hand-in-hand to reveal only the best cocoa has to offer.

The cocoa beans are shipped directly by the producers to the Manufacture workshops. This means we can guarantee perfect traceability. We carry out months of research on optimizing every product, which enables us to validate perfect fermentation-roasting combinations. CLUIZEL Manufacture roasts the beans itself then creates cocoa paste and then chocolate. CLUIZEL Manufacture is one of the few Cacaoféviers® in the world capable of mastering the process of transforming the bean into cocoa paste to create dark, milk and ivory (white) chocolate.

The cocoa beans are fermented to perfection on the plantation, then everything else takes place in CLUIZEL Manufacture, from slow roasting that releases aromas optimally through to enhancing products with decorative touches that are often hand-crafted. And, the result: a myriad of tastes from incomparable terroirs, exalted through traditional and innovative recipes.

The 3 Crafts

Cacaofévier®: CLUIZEL Manufacture is one of the few Cacaoféviers® in the world capable of mastering the process of transforming the bean into cocoa paste to create dark, milk and ivory (white) chocolate.

Confectioner: CLUIZEL Manufacture imagines its own recipes for fillings: praliné, almond paste, caramel, nougatine, liqueurs, gianduja, etc.

Chocolate Maker: CLUIZEL Manufacture crafts the shapes of the confectionery before coating them with a fine layer of chocolate and enhancing them with decorations that are often hand-made. Our most complex chocolates require the skills of up to 33 people during the manufacturing process.

STORING, TASTING AND ALLERGENS

Our chocolates should be ideally stored between 16 and 18°C in a cool, dry place.

The maximum shelf life from the date of manufacture for chocolates, known as the BIUB (best if used before date) is specified on the back of the packaging of all CLUIZEL Manufacture products.

You will find information about allergens and possible traces in each product datasheet, under the “Ingredients” tab; allergens are easy to see as they are marked in bold type.

CLUIZEL Manufacture uses only healthy ingredients that are Noble Ingredients-guaranteed. We use rapeseed lecithin as a preservative and coloring of natural origin only, free from E171 and E172, for coloring our decorations (curcumin, carotene, beet, etc.), nothing else is added.

CLUIZEL Manufacture initiated a quality commitment that is the only one of its kind in the world, that certifies the choice of raw materials and is specified on all of our products. This “Noble Ingredients” commitment ensures that only pure cocoa butter, Bourbon vanilla pods and sugar are used in making our chocolate. Furthermore, our chocolates are guaranteed soy-free and no flavoring is added during manufacturing.

In addition to our cocoa beans, here at the Manufacture, we also select the raw materials required for making our creations and their fillings with the utmost care. Moreover, CLUIZEL Manufacture worked on removing E171 and E172 coloring agents from our products and replaced these with coloring ingredients to ensure you are offered products that are healthier and natural.
